Mexican Wedding Cakes

Ingredients

  • 1 c butter
  • 1/2 c powdered sugar
  • 1/2 t vanilla
  • 1.75 c flour
  • 1/2 c chopped walnuts
  • 3/4 c powdered sugar (for dusting)
  • Directions

    1. Preheat over to 350.
    2. Cream butter and sugar.
    3. Add reset of ingredients and incorporate by hand.
    4. Refrigerate for 10 minutes.
    5. Using a small cookie scoop, scoop out a flat spoonful.
    6. Roll the dough into a ball.
    7. Place on a air pan cookie sheet.
    8. Bake at 350 for 14 minutes (or until bottom just starts to brown).
    9. Allow to cool on the sheet for 1-2 minutes.
    10. Remove to a cooling rack.
    11. Allow to cool until just barely warm.
    12. Roll in powdered sugar and set aside until cool.
    13. Roll again in powdered sugar once cool.
